A Decadent Breakfast

Our regular Sunday breakfast of pancakes was jazzed up a bit by yummy balsamic strawberries!



Wholemeal and Oat Pancakes with Balsamic Strawberries

2cups wholemeal flour
1/4cup oats
2tsp bi-carb soda
3 eggs
1/4cup sugar
1 3/4cups milk
1tbs vinegar

Mix together dry ingredients and eggs. Mix milk and vinegar in separate jug. Slowly stir wet ingredients into flour/egg mixture. Cook 1/4 cupfuls in greased frying pan over moderate heat.

For the strawberries:
1/4 cup sugar
1/4 cup water
2 tsp balsamic vinegar
1 tsp arrowroot/cornflour mixed with 2tbs cold water
250g strawberries, halved or quartered

In small saucepan over low heat dissolve sugar in water and vinegar. Once dissolved add arrowroot/cornflour mixture and simmer until syrupy. Stir through strawberries.

Enjoy on a lazy Sunday morning with family and friends!

  1. What a delicious Sunday breakfast. I bet the strawberries were a hit. We've been enjoying strawberries on our cereal in the mornings at the moment. They've been a nice treat in our house. Enjoy your Tuesday Vic.

  3. oh, and I looove your weekly menu idea. I would love to do the same online. Can I borrow your idea? Maybe you could set up a mr linky and make a button, and lots of us could all join in....??

  4. I haven't even heard of the recipe book, sounds right up my alley though! I'll look for it at the library tomorrow! Menu planning, dillpickle unfinished is a big menu planner and she's got a couple of links on her blog to other menu planners. I'm on there. I've no idea how to do a button but it sounds like a good idea. We're in Australia! In QLD, about 3hrs north of Brisbane.

    i am a big fan. its vegetarian food that you wont end up being skinny or anaemic over! and used heaps of fruit and veg which is great if you are growing surplus! opk...time to follow your menu links. Have a lovely day.

  6. Brr, we're well into spring now, undies/nappy and t-shirt weather for the boys! I do love the cold though. I'm going to go and check out her website. We're not vegetarian, but I try to have a few meatless meals a week. I had a look last night about how to make a button and got myself completely confused!
